Sequoia National Park

I live in Redondo Beach, where the sun shines all year long! I love adventures and exploring the world. I will show you my road trip to Sequoia Park last summer in 2023. I drove from my house for 4 hours and stayed in an Airbnb in Visalia, which is 30 minutes from Sequoia. The reason I didn’t stay in a cabin is that I wanted to drive the next day to Yosemite National Park. If you love driving, then you are okay going up the mountains. For electric vehicles, there are no charging stations in Sequoia. If the car’s gas tank is half way, I would recommend filling it up. Never take chances and run out of gas where phone reception is limited.

If circumstances lead me back to that destination in the future, I would definitely make use of the shuttle service available for a reasonable price of $20, providing a convenient round trip from Visalia to Sequoia Park. You can easily access this service through Sequoia Shuttle. In addition, for those who prefer to drive, parking at Sequoia Park is a convenient option available at a flat rate of $35 for a 7-day period. This allows visitors to confidently plan their journey and budget for any additional expenses, ensuring a stress-free and delightful experience amidst the stunning natural landscapes.

Check out the road condition, as it could be closed depending on the weather. I recommend checking the website HERE before visiting Kings Canyon. When I went in June, I had to drive 2 hours around the mountains to make it to Kings Canyon, where all the big trees are.

One of the best decisions I made while driving was to pack all my snacks and bring a cooler to store fruit, a sandwich, and water. Moreover, I made it a habit to carry my backpack at all times, with a jacket in case I got lost and hungry. This ensured that I would stay warm and have survival food bars with me. Considering that the summer weather hovers around 50 degrees, it’s important to dress warmly to fully enjoy the view and the beauty of nature, which always bring the biggest smile and happiness.

Palm Springs-winter

Our Palm Springs getaway mini vacation was fun and very relaxing. I would like to share all the good spots we explored so you can get a cool idea of what to do during the wintertime. Winter temperatures are at the lowest 40 degrees at night to 75 degrees during the day. This is the perfect time for hikes and desert fun!

There are three parts of the Indian Palm Spring Canyons: Palm Canyon, Andreas Canyon, and Murray Canyon. We walked about three miles on the Palm Canyon trail. The view is breathtaking! CLICK HERE

We booked our hotel through Expedia.com four days before our departure. Our plan was to find something nice, comfortable, and affordable. We picked the Paloma Resort! It has been open for three months now. The resort is only 7 mins away from downtown. The colorful aesthetic vibe makes the resort very unique. The rooms are very new and the atmosphere is more family oriented compared to Margaritaville hotel. The Lobby welcomes you with amazing greetings and European drinks. From 8am to 10am, there is European breakfast in the pool room. The pool is heated and the jacuzzi is the perfect temperature! There is even live music from 3pm to 4pm by the pool. I totally recommend visiting the restaurant if you don’t feel like going out. The food is delicious. CLICK HERE

If you are looking for the best tacos in town, I recommend the JWB Grill inside the Margaritaville resort. It comes with GF tortillas and yuca fries. The parmesan fries are my favorite! CLICK HERE

Our favorite dinner spot this time was Inca Peruvian Cuisine. The food there was so delicious and fresh. The service is great and they are very fast. While you wait, you can order the best Pisco Sour I have ever had! I’m Peruvian so I have good taste when it comes to authentic Peruvian cuisine. CLICK HERE

After dinner, we headed for live music at Las Casuelas Terraza Mexican restaurant. CLICK HERE

Everything is within walking distance or a short drive of 5-10 mins from the hotel if you are looking for something like a Starbucks or any local store. We found this great brunch spot in the Palm Desert. The Daily Grill is a cute spot where all the attraction is if you are looking for a variety of restaurants and shops. CLICK HERE

Another place to visit is the Living Desert Zoo and garden CLICK HERE Our experience was different from going to the Los Angeles Zoo. The desert vibe experience is nice and peaceful and not crowded at all. You can actually take pictures here and have your own space.

Vegan Pumpkin Pie

My family has food allergies and I have to get created with meals that don’t have eggs, peanuts, tree nuts, dairy and gluten. It looks complicated and I asked myself so many times, “What can they eat?”. I did my own research what I could use instead of eggs and wheat flour.

2 eggs = 1 ripe banana or 2 tbsp applesauce or 2 tbsp olive oil

Wheat flour = rice flour or tapioca flour

Vegan recipes — **Homemade vegan pumpkin pie**

INGREDIENTS:

1 3/4 cups pure pumpkin purée (1, 14 oz can)
3/4 cup full-fat coconut milk (can, shake well before measurement)
1/2 cup brown sugar
1/4 cup cornstarch or potato starch
1/4 cup maple syrup
1 tsp vanilla extract
2 tsp pumpkin pie spice
1/2 tsp cinnamon
1/2 tsp salt
1 vegan pie crust

Preheat your oven to 350F (180C)
Have your unbaked 9” pie shell ready
Add the pumpkin, coconut milk, brown sugar, cornstarch, maple syrup, vanilla extract, pumpkin pie spice, cinnamon and salt to a blender or a large bowl. Mix well.
Pour the pumpkin mixture into the pie crust. Use a spatula to spread the pumpkin evenly and smooth out the top. Bake for 60 mins. When you remove it from the oven, the edges might be slightly cracked and the middle will still look wobbly. Let it cool, and then chill in the fridge for a minimum of 4 hrs or overnight until completely set.

Palm Spring getaway

I love going on adventures every year and explore nature no matter what the weather condition is. As I mentioned, snow or desert heat I am there.

We decided to get away for a weekend without the kids.

My experience in Palm Springs is always fun and adventurous. From hikes to great places to dine-in and party.

Where to stay: Book through Expedia or Kayak for better deals!

Hilton Palm Spring for a quieter vacation and perfect for families with young children. No bar or DJ or live music by the pool. From there you can explore the desert. Click here
Margaritaville Resort Palm Springs is a fun hotel to stay. Perfect for couples that need to get away from reality. Best part of the hospitality you have a bar, DJ and/or live music by the pool. At night, the pool area has firepits and it’s open until 10pm. Click here

Where to eat:

Las Casuelas Terraza Mexican restaurant in downtown. The food is so delicious and guess what? Best Margaritas in town!! Gorgeous outdoor seating with live music. Click here
JWB Grill has the best fish tacos! Click here

For night out:

The Village Pub is the best place to get the body dancing all night with live music and DJ. Everything in one location. It has two floors so you can choose what your mood feels like. Click here for details
Moxie Palm Springs is a great place to enjoy live music and you can go upstairs for a nicer view. Food is descent.

Explore:

My favorite place to hike is at the Indian Palm Spring Canyons. I recommend going around May and early June (80-95º). Discover the beauty and history from all three Palm Canyon, Andreas Canyon and Murray Canyon. Three days ago, we saw two big horn sheep. Pack a small towel and cool down in the creek. Water all year round! Click here

Another awesome place to visit is the Palm Springs Aerial Tramway. Online booking is not available at this moment because of covid. But, you can show up and buy your ride ticket at the boarding station. If you are driving there is a parking fee.

This place is open at 10am (Sat, Sun & holiday at 8am);

until 9:30pm (Friday & Saturday at 10:30pm).

The Tram takes you all the way up to Mount San Jacinto State Park (elevation 8,516 feet). The restaurant has an amazing view to the mountains. Enjoy over 50 miles of hiking trails, history museum and shops in case you get cold or need a gift.

Bring a sweatshirt or jacket if you are planning to go around May-June. ***During winter time you must bring snow gear.

Travel ideas

Traveling can be stressful if you’re planning an overseas trip. Even if you travel inside the country, it requires many steps. You need birth certificate, ID/DL or non-expired passport, flights, hotel, transportation from the airport to your destination, outfits, a tour guide, places to eat, and COVID-19 testing.

Are the kids coming or staying at home? Then, it’s more planning for who will stay with them while you’re away or, if they are coming, what do you need to be prepared with your child? You’ll need a birth certificate to travel between the United States and Canada by land or sea. However, in the event that the child needs to travel back to the U.S. by air, a passport book is required. Every U.S. citizen, regardless of age, must have a passport to travel abroad. Newborn babies, infants, and toddlers all need a passport to leave and enter another country.

This trip was months of preparation. Kids stayed at home! We needed new passports and the travel health visa to enter the Bahamas. Once we got our passports, we were able to open an account by entering all our personal information, including COVID-19 requirements. I scheduled us in advance for the COVID-19 tests (72 hrs prior to the flight). Also, we got travel insurance in case anything happens. It’s better to be prepared!

Happy New Year! I am glad we got through the holidays and are starting 2022 with positive vibes. I narrowed down all my favorite outfits, home decor and kitchen supplies.

These reusable food wraps have saved my life! No more plastic or ziplock bags. 100% compostable. 1-yr lifetime (about 100 uses).
This bamboo laptop stand is a multi-purpose little table. it can be used standing up on top of a table or desk and sitting down over your lap with legs height adjustments.
I love Spanx leggings so much. These faux leather leggings have super stretchy and soft fabric. No camel toe and they fit true to size. You can dress them up or down. All my Spanx leggings are size regular x-small. My height is 5’5” and bottom size 0.
The Favy brand razor helps to remove all the dead skin and facial hairs from your face. I’ve been using it for several months now. My facial hairs grow back as normal (not thicker).
When it comes to hair tools, these are my favorite ones. The Revlon hair dryer dries and brushes your hair at the same time. It’s the best creation ever for people like me that don’t have the perfect hand coordination to hold a brush and a dryer at the same time. The hair waver gives you perfect beach hair. The curling iron is my favorite for big curls and last for a long time.

Add the pumpkin, coconut milk, brown sugar, cornstarch, maple syrup, vanilla extract, pumpkin pie spice, cinnamon and salt to a blender or a large bowl. Mix well.
Pour the pumpkin mixture into the pie crust. Use a spatula to spread the pumpkin evenly and smooth out the top. Bake for 60 mins. When you remove it from the oven, the edges might be slightly cracked and the middle will still look wobbly. Let it cool, and then chill in the fridge for a minimum of 4 hrs or overnight until completely set.

As a parent and full-time accountant, working from home has been a transition from business to casual attire. These days, we don’t have to worry about commuting to work, so we can save on both time and money. There is more time to focus on ourselves and our families. Do I wear jeans everyday? No, but I like to wear a variety of different outfits throughout the week. Leggings have become my new number one. Which brands do I like? Spanx is perfect to shape your curves nicely. Express has great vegan leather leggings but they don’t fit true to size so I go a size down to XXS. Target has Assets by Spanx which is so affordable and fits great.

I purchase my skinny jeans from Express and Old Navy. Recently, I placed a couple of orders for the Sofia by Sofia Vergara jeans collection from Walmart, which fit true to size. They are great quality and super stretchy.

Nordstrom has great sales. By signing up for the Nordstrom club and applying for the credit card, I can save more and gain cash back. Each time I do a curbside pickup I make $10. That is a great deal! Many items I purchased there were for free or for a few bucks.

Vintage Boho’s selection is my favorite from the Louis Vuitton collection.

A lot of my hat collection comes from Amazon. There are affordable prices from $7 and up. They are great quality and durable. If you are looking for wool hats, I have linked awesome deals here.

I love Pinklily. All of the sweaters, jeans, bralettes, and cardigans I wear come from here. They are great quality, the colors are stunning, and they have good sales all the time.
