Vegan Pumpkin Pie

My family has food allergies and I have to get created with meals that don’t have eggs, peanuts, tree nuts, dairy and gluten. It looks complicated and I asked myself so many times, “What can they eat?”. I did my own research what I could use instead of eggs and wheat flour.

2 eggs = 1 ripe banana or 2 tbsp applesauce or 2 tbsp olive oil

Wheat flour = rice flour or tapioca flour

INGREDIENTS:

  • 1 3/4 cups pure pumpkin purée (1, 14 oz can)
  • 3/4 cup full-fat coconut milk (can, shake well before measurement)
  • 1/2 cup brown sugar
  • 1/4 cup cornstarch or potato starch
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1 vegan pie crust

  • Preheat your oven to 350F (180C)
  • Have your unbaked 9” pie shell ready
  • Add the pumpkin, coconut milk, brown sugar, cornstarch, maple syrup, vanilla extract, pumpkin pie spice, cinnamon and salt to a blender or a large bowl. Mix well.
  • Pour the pumpkin mixture into the pie crust. Use a spatula to spread the pumpkin evenly and smooth out the top. Bake for 60 mins. When you remove it from the oven, the edges might be slightly cracked and the middle will still look wobbly. Let it cool, and then chill in the fridge for a minimum of 4 hrs or overnight until completely set.

As a parent and full-time accountant, working from home has been a transition from business to casual attire. These days, we don’t have to worry about commuting to work, so we can save on both time and money. There is more time to focus on ourselves and our families. Do I wear jeans everyday? No, but I like to wear a variety of different outfits throughout the week. Leggings have become my new number one. Which brands do I like? Spanx is perfect to shape your curves nicely. Express has great vegan leather leggings but they don’t fit true to size so I go a size down to XXS. Target has Assets by Spanx which is so affordable and fits great.

I purchase my skinny jeans from Express and Old Navy. Recently, I placed a couple of orders for the Sofia by Sofia Vergara jeans collection from Walmart, which fit true to size. They are great quality and super stretchy.

Nordstrom has great sales. By signing up for the Nordstrom club and applying for the credit card, I can save more and gain cash back. Each time I do a curbside pickup I make $10. That is a great deal! Many items I purchased there were for free or for a few bucks.

Vintage Boho’s selection is my favorite from the Louis Vuitton collection.

A lot of my hat collection comes from Amazon. There are affordable prices from $7 and up. They are great quality and durable. If you are looking for wool hats, I have linked awesome deals here.

I love Pinklily. All of the sweaters, jeans, bralettes, and cardigans I wear come from here. They are great quality, the colors are stunning, and they have good sales all the time.

Michelle’s Boutiques is a local store in Hermosa Beach, CA. They have amazing outfits for the beach or for the red carpet. I find stuff from Free People too. If you buy there, mention my name.
